You might not know it at first. Before this sort of stout goes into barrels it can be harsh, strong, boozy and rough. But you’ve got to think ahead—those harsh flavors will dissipate and subtler flavors will shine through. Oxygen, wood contact, and time create new delicious tastes… and before you know it a cohesive beer has emerged.

Aroma has fusel alcohol with lots of bitter chocolate and red fruit. No vanilla. Hints of whisky, lots of milk chocolate, caramel and cherries on the palate. Low tannins. Needs more time.
