Story

PASTEL PALACE is a nano-project made in Hudson with the help of our good friend J Stephen Cassicles, a local wine guru with an incredible small vineyard in Athens, NY. With Stephen’s help, we made a “vierre” - a blend of beer and wine co-fermented with wine yeast. The base beer is a strawberry ale, and the wine featured Burdin 6055, Annie Noir, Le Colonel, Verdelet, and Concord grapes. The result is extremely berry-forward on the nose with vinous complexity, gentle effervescence, and a crisp finish. We produced 196 bottles, and they will only be sold at our taproom.
